Thyme Honey – The Spicy
Our pure thyme honey – collected from wild thyme bushes in the secluded mountains of Central Otago on the South Island: every year from late October, countless wise and purple flowers on the mountain slopes welcome the New Zealand spring. Outside the Mediterranean region, this is the only place where the herbs grow non-cultivated in such high numbers that the production of an almost pure variety honey is possible.
Taste & Application
Sweet, fresh and spicy: our thyme honey enchants the senses with its intense aromas and an unmistakable scent of the essential oils of thyme flowers. The dimensions of the taste range from a tart sweet to a slightly hot, spicy note and unfold both in pure enjoyment on the spoon and in processing in a wide variety of recipes. There are no limits to the application: whether in sauces, marinades or as a highlight in salads – this honey gives many dishes a special character.
Quality
The quality and therefore the origin of our honeys has the highest priority for us. For this reason, we purchase honey only from selected beekeepers. Beekeepers we know personally and who have been working with us professionally for years.
By premium quality we mean above all the special freshness of our honey. This also means that an above-average number of enzymes can be detected in our thyme honey. Laboratory analysis also demonstrates high enzyme activity and a diastase value beyond the limit of quantification. We attach great importance to delivering quality that meets the highest standards. Our honeys are always free of glyphosate.
